The water temples are ancient water pumps, that have been built up through the centuries, mostly during and after the Kaatyclyzym, and imbued with magick, later gaining a nearly religious mythology.
The willing heart must be from a pure soul.
The most recent heart, the person was resurrected (their heart magically regrown), and then later became impure. So the heart that was in the jar became impure and contaminated the water. ((the importance of maintaining Good throughout one's life, "a hundred attaboys can be wiped out with one ah shit."))
